Creating an herb garden of your own is a wonderful
way to get to "know" the herbs that God put on this earth for us to use.
There are many uses for herbs, as we all know. The most well-known use is
culinary - where would we be without herbs to add to our food? The medicinal
and nutritional aspect of herbs are making a comeback in the past few years
as people are frightened at the thought of all of the side-effects of drugs
and are beginning to realize that herbs work - sometimes even better than drugs.
Another rapidly-growing use of herbs is for what is called "aroma therapy". The
simplest form of aroma therapy and so wonderfully relaxing is simply going
into your herb garden and running your hands over the plants. The aroma
of the herbs gently fills not only your nose, but seems to embrace your whole
being!
It is best to start small, with easy-to-grow perennial herbs (the ones that
come back every year) whose names you are familiar with from cooking; oregano,
sage, chives, and savory are easy ones to start with. They are very hardy
and it's so nice to pop out to your kitchen garden and snip a handful of
fresh oregano to add to your pasta sauce or some sage to throw onto your
frying chicken or pork! It'll make you feel like a pro right away and that'll
build your confidence so you'll be ready to keep going!
Additional
herbs that are a bit different, easy to grow and wonderful to touch are Lemon
Balm (watch out, it'll take over your whole garden ... but it's worth it!),
Hyssop, Rosemary (take it in in the winter & see if you can keep it alive)
and Dill.
