Dandelions!

 Dandelions are viewed as a noxious weed by most folks today, but did you know that they were brought over to America by the Europeans for their many useful properties?  They are traditionally dug in the springtime, especially by the old Italians (are there any left?!) to put in salads.  The leaves are full of vitamins and minerals, have a bitter taste, which aids digestion by getting juices flowing in your mouth as you chew.  If you want to mitigate the bitter flavor, just mix some dandelion greens in with your other salad greens.

Or you can use  my grandmother’s recipe, which is to fry a few pieces of salt pork in a mixture of butter and olive oil, add your dandelion greens and saute’ until they’re wilted & hot. Sprinkle with salt and freshly-ground pepper, shake on some Balsamic vinegar & serve..  Yum!!

OK, so when is Mom not right?  I AM walking too fast in the video.  I want to share more with you, so I’ll post the videos that I have and when I make more, I’ll make them a bit longer.  But for now…

Another beeeautifuuuul spring day in the Berkshires!

Good morning!  I hope you had a restful sleep last night.  Even tho’ it’s on the wane, the moon has been so very bright during the night … have you noticed?  It fills the bedroom window with a beautiful moonglow.  I almost hate to go to sleep and miss it.

I thought I’d continue to share some pictures of springtime in the Berkshire woods and my gardens and maybe even give you a bit of education on some of the medicinal uses for simple herbs that you probably have growing somewhere accessible (if you’re in the country, that is).  If you’re in the city, now’s the time to consider getting some pots and planting some simple herbs for your windowsill or deck!

I hope you enjoyed yesterday’s two videos.  My mother said she clicked on it (my one devoted follower!) and that it was nice but, “WOW, you walk fast!” 😉

I’m talking you to a beaver dam (sorry, beaver DARN) that’s not too far from where I live.  So peaceful.  I hope you can feel the warm, fresh air that I am so blessed to be able to enjoy as I filmed. Believe me, I do not take it for granted!  I thank God every day for the blessings He has bestowed upon me.  And I am happy to share with you (Mom).

Welcome Spring!!

Hello out there!  I have to admit, I’ve been horribly inattentive to my blog.  My apologies!  But … I’ve created an instagram page and am posting pictures of my gardens as they go from “dead nothing” in the beginning of April to pushing through the soil towards the sun, turning green so we can actually believe that the garden will once again be worth looking at … and pictures of the appearance some actual flowers. I call it “Watch My Gardens Grow”.  I’ve also been out in the woods, foraging for Ramps, Fiddleheads and other herbs that are already here and offering themselves for our food, health and well-being.  Deo Gratias!

I got a nudge from my sister the other day about the blog, however.  She admonished me that “if you are going to have a blog, you have to keep it up!”

So, here I am.

I have some really cool videos of walks in the early spring woods here in the Berkshires that I’d love to share with you.

I hope … HOPE!  that the videos don’t come out sideways.  They come out sideways on my computer, but that’s because I took them with my iphone which always does that.  If they do come out sideways, I’ll just have to scrap that idea and post pictures of wild herbs and herbs from my gardens as they appear.
